How to make Cherry Brownies.
First, preheat your oven to 350°F and line a 9 x 9-inch square baking pan with parchment paper.
Slice your cherries in half and remove the pits. You can always opt to use a cherry pitter for a quicker, cleaner process. For this recipe I used frozen pitted dark cherries. I put the cherries in a bowl and let them thaw before adding them into my batter to reduce any excess liquid.
In a small saucepan melt butter and chocolate chips on the stove over medium heat. Stir constantly until melted. You can also use an 8 oz chocolate bar chopped into pieces.
Remove the melted chocolate from the heat and allow to cool for 10 minutes.
When the chocolate is cool, in a large mixing bowl using a hand mixer, or in a stand mixer, whisk together the oil, and sugars on high until the brownies batter is smooth.
Next, add the eggs, vanilla extract, and melted chocolate mixture and whisk again until combined.
Then, using a rubber spatula, fold the flour, cocoa powder, cornstarch, and salt into the wet ingredients until well-combined. Make sure your batter is smooth and free of clumps and flour pockets.
Fold in your chocolate chips and cherries.
Use a spatula to pour batter into your prepared pan. Spread the batter evenly throughout the pan. Sprinkle some extra chocolate chips and cherries over the top of the batter.
Bake for 30-35 minutes until a toothpick comes out clean.
Allow them to cool for 5 minutes, then remove the brownies from the square baking dish and allow to completely on a wire rack before slicing. Top with some vanilla ice cream and enjoy!
