Summer is here and in full swing!! This is our first summer in Tennessee and so far we enjoy it, but I know there will be parts that will be a culture shock. Especially in another month or so. One of my favorite things to bake in the summer (and all year long really) is pies!! Apple is my favorite and peach cobbler is right behind!
One of the things I’m really looking forward to this year is BBQs with friends! We’ve met some amazing people here already and hanging out during the summer is going to be awesome! With the enjoyment of BBQs outside, there is also the side affect of the summer heat and melted food. So how do we keep pies fresh during the summer months.
TIP #1 Keep pies cool
There are a few tips for keeping fresh pies on the hot summer days, and the easiest one is refrigerate! Keep your pies cool until they are ready to be served or warmed.
If you are in a backyard setting, it is easiest to leave the pies in the refrigerator until 30 minutes before serving. When ready to warm, cover the pie with foil, warm them in a 180’F oven for 20 minutes. Then serve with cold ice cream.
If you are at the park, keep your pies cool in an ice chest with icepacks until ready to serve. If you are serving your pies warm, keep the pies in a warming bag until you are ready to serve them.
TIP #2 Cool the Counters
This is a great tip for when you are baking and the counter is hot. The air conditioner will help for the short term, but if you want to keep the kitchen counters and pie ingredients cool for the couple hours you are baking, it won’t be enough.
To keep your kitchen counters cool while baking, place ice cubes in a ziplock bag and fill the bag with cold water. Lay the bags flat on the counter. This will keep the surface under the bags cool. Remove the bags when you need to use the counter space. Then replace then when you have no ingredients there.
