If you don’t like strawberry jam, you can fill these cookies with your favorite jam instead! These sugar cookies are so delicious and have the perfect hint of vanilla in them! They would look great on a Valentine’s themed decorated table with other sweet treats. Enjoy them with a cold glass of milk, ice cream, or your favorite warm beverage!

What equipment do I need to Make Cutout Sugar Cookies?
For these strawberry jam filled cutout sugar cookies you will need a few pieces of equipment, but I can guarantee most of them you have in your pantry already! You will need: a hand mixer or stand mixer, rolling pin, and cookie cutters. For this recipe, I used these round cookie cutters for the base. And for the top cookie I used the “O” in a cookie cutter pack I found at Target. You can also use a round cookie cutter and a small heart shaped cookie cutter to make the top cookie. Simply cut out the circle cookie first, then use the heart shaped cookie cutter to cut out a heart in the center of the circle cookie!
Why do I use Vanilla Bean Paste?
A few years ago I didn’t even know vanilla bean paste was a thing. I had never even heard of it! But I absolutely love it! Vanilla bean paste is a lot thicker than vanilla extract. Vanilla extract is more liquidy and can cause your cookies to have more liquid in them, which could cause your cookies to spread in the oven (yes, even after chilling). Vanilla bean paste is thicker and holds its shape more. Plus, I feel it adds more of that delicious vanilla flavor to the cookies.

How to Make Jam Filled Cutout Cookies
These strawberry jam filled cutout cookies are made like any other cutout cookie. The dough is the same. The difference here is they are filled with your favorite jam! In this recipe I fill the cookies with strawberry jam. It’s our favorite around here. Plus it’s red for Valentine’s Day! You can either use store bought strawberry jam or try our homemade strawberry jam! The choice is yours.
These cutout cookies do need time to chill, so make sure you make the dough the day before and let them chill overnight, or you start them in the later part of the morning so they are ready in the afternoon or evening. You can also make these the day before and enjoy them the next day!
To make the dough you’ll beat the sugar and butter on medium speed until fully mixed. This will be about 3-5 minutes. You can use either a hand mixer or a standing mixer to do this. Both work great.
Add in the eggs and vanilla, until the dough becomes lumpy and resembling cottage cheese. On low speed, add in the flour one cup at a time. Speed up the mixer to medium speed. The dough is done when it starts to pull away from the sides of the bowl.
Remove the dough from the mixing bowl and shape into a disk, cover with suran wrap and chill for at least an hour.
After the dough chills for at least one hour, remove from suran wrap and cut in half. Cutting it in half makes it easier to work with the dough. The dough will be hard. Knead the dough around on a lightly floured surface to warn it up. Using a rolling pin, roll the dough flat into about ¼ in thick. You can do a little thinner for these cookies, so they are not too thick. Add flour periodically to the dough, rolling pin, and surface so the dough does not stick.
Cut out your shapes and place on your parchment paper lined baking sheet about 1 inch apart.
Put back in the fridge for 5-30 minutes. For this recipe I put the cutout cookies in for 30 minutes. Chilling the dough helps prevent spreading of the cookies. They will stay nice and formed when baked.
While the cutout cookies are chilling, preheat the oven to 350’ F. Bake the cookies until they are JUST golden brown, about 10-12 minutes.
Make sure you don’t over bake these or they will be too hard.
How long do Jelly Filled Cutout Cookies keep?
These jam filled cutout cookies will keep fresh in an airtight container in the fridge for 2-3 days. Leave out for a few minutes to warm up before enjoying.

Jam Filled Cutout Sugar Cookies
Ingredients
- 2 sticks unsalted butter, cold
- 1 cup granulated sugar
- 1 egg
- 1 TSP vanilla bean paste
- 3 cups flour
Instructions
- Slice butter into 1/2 inch slices
- Cream butter and sugar on medium speed until fully incorporated.
- Add egg and vanilla. Mix until dough had a cottage cheese like consistency.
- On low speed, add flour one cup at a time. Turn speed up to medium-high.
- The dough is done mixing when it starts to pull away from the sides.
- Remove from bowl and form dough into a disk. Cover with plastic wrap and chill for at least one hour.
- After chilling, remove from plastic wrap and cut in half.
- Roll the dough 1/4 inch thick or slightly smaller.
- Press cookie shapes
- Place on parchment paper lined cookie sheets and chill for 5-30 minutes.
- Preheat oven to 350'F
- Bake cookies for 10-12 minutes.
- The cookies are done when they are just barely golden brown.
- All to cool.
- Once cool, add your favorite jam to the center of the round cookie and press the top cookie on top.
- Keep in airtight container in the fridge for 2-3 days.
Notes
Make dough the day before and chill overnight.
