If you’ve ever had a monster cookie, you know how jam packed they are with greatness; cookies and candy in every bite! This monster cookie ice cream was created to showcase that same love for baked monster cookies, but in a homemade ice cream version. This no churn ice cream is a cookie lover’s dream! And the best part is that this cookie ice cream recipe does not need an ice cream maker. It is a no churn ice cream recipe. But don’t worry! You will still get a very creamy ice cream dessert!
What equipment do I need for no churn ice cream?
For this no churn ice cream recipe, you will need just a few pieces of equipment:
- Medium bowl with a hand mixer OR stand mixer with the whisk attachment
- Large bowl
- Rubber spatula
- Ziplock bags
- Rolling pin OR something equivalent to smash cookies
- Blender or food processor (optional)
What ingredients do I need to make Monster Cookie Ice Cream?
Sweetened condensed milk
Vanilla extract
Heavy cream
Nutter butter cookies
Cup M&Ms
Regular chocolate chips- you can substitute these for mini chocolate chips
Oatmeal cookies
How do you make Monster Cookie Ice Cream?
Pour oatmeal cookies into a large ziplock bag. Seal the bag and hit the bag with the end of a rolling pin until the cookies are broken and somewhat smashed but some big chunks remain. You can use a blender or a food processor as well by pulsing the cookies, just be careful not to over pulse or you will lose the bigger chunks of cookies you will want in your ice cream.
Repeat this process with the Nutter Butter cookies.
Reverse 1/4th cup of each cookie chunks.
After the cookies are broken up, in a large bowl combine the sweetened condensed milk and vanilla extract. Stir this together until ingredients are fully combined.
Next, pour heavy cream into a different large bowl or the bowl of a stand mixer with the whisk attachment and whisk on high until stiff peaks form.
Once stiff peaks form, pour the whipped heavy cream into the sweetened condensed milk mixture and gently fold in. When cream is almost folded in pour the crushed cookies, M&Ms, and chocolate chips into the bowl and fold those in.
Once all is combined, pour ice cream mixture into a loaf pan and spread out evenly.
Top with reserved cookies and more chocolate chips and M&Ms if desired.
Place in the freezer and freeze for four hours or overnight. I like to freeze overnight.

Store in an airtight container in the freezer for up to 3 weeks.
